The secret of the fish soup, officially called Tiszai, which received the title of Hungarikum a few years ago, in addition to the quality of the raw materials, is that they use the bones of several types of fish to prepare the broth, in which the fish fillets are cooked after having been thoroughly passed.
The festival, which is being organized for the twenty-sixth time, begins on Friday afternoon with entertainment programs. On the second day of the event, on Saturday, in Partfürdő in Újszeged, amateur chefs, top chefs, teams of families and companies, and prominent figures from politics, public life and sports will try to show off their skills in cooking fish juice. Dozens of teams will prepare their fish in one or more of their pots, and there will be hosts of hundreds of people.
On the Szeged River side, the event’s fisherman’s tavern prepares fish in a giant 2,500-liter cauldron set on the watery bastion. The cauldron is boiled on Saturday and Sunday, so 10,000 servings of fish juice are prepared there in just the two days.
Other fisherman’s taverns in the area await gourmets with fried catfish, perch, bream, fish roe, horseshoe carp and catfish paprikash, as well as the typical Zuged fish soup.
Visitors will be able to taste kürtős kálács, products of Hungarian winemakers and breweries, and can choose among the best Hungarian artisanal products.
Audiences will enjoy light and folk music, as well as jazz concerts and children’s programmes.
Charitable initiatives are also traditionally associated with the festival. A charity bike race and bike ride in favor of pediatric surgery will be held in Szeged on Saturday morning, starting from Partfürdő. The Rotary Club of Szeged Cathedral is again organizing – for the eighth time – a rubber duck competition on Saturday afternoons in Tisza. Proceeds go to Rotary’s Gift of Life – The Gift of Life! They support a project created to provide children born with heart defects the chance to have life-saving heart surgery.
